Morrocan-style warm salad
My attempt at recreating a delicious meal I discovered at a street market…
Ingredients for the plate
Flat bread (Ararat bread, naan or other)
Lambs lettuce & wild rocket salad
Spinach (a little)
Sour cream - optional
Ingredients for the sauce:
1 Lime (for the juice)
1 Lemon (for the juice)
Salt
Pepper
Tomato purée (2 tblsp)
Ground Cumin (2 tblsp)
Ground Coriander (2 tsp)
Garam masala (2 tsp)
Cayenne pepper (to taste)
A tin of tomatoes
A tin of black beans, drained
A tin of chick peas, drained
A tin of butter beans, drained
A tin of green lentils (bijoux verts), drained
A tin of red kidney beans, drained
A jar of pitted black olives (cheap ones are fine), drained
1 x vegetarian stock cube
1/4 of a cup of of water to make it saucy
4 Garlic cloves, crushed
4 medium tomatoes cubed
Instructions
Boil the kidney beans in water on high heat for 10 minutes, then drain them - this is necessary to remove their natural toxicity which can otherwise give you a nasty stomach ache
Chuck the kidney beans and all the other sauce ingredients in a saucepan (making sure to drain beans, lentils and olives first) and cook the sauce on low heat for 10-15 minutes, stirring occasionally
Warm the bread in the oven/microwave
Taste the sauce and adjust as necessary (add more water or tomatoes if too dry, more citrus, salt or cayenne if too mild).
Serve!
Should serve at least 4 people, or leave you with plenty of leftovers!
